#021 MYOJO Okinawa Soba

Don’t be fooled by the word soba, these are not buckwheat noodles. Okinawa soba is just the style of ramen from Okinawa! That’s all I know. The soup has a strong bonito & seaweed flavor and the noodles are different in that they are flatter, thicker and a bit chewier. I’m not sure why but I really like the wavy shape, it makes it extra slurpy and fun.

    I always loved Okinawa Soba, but I can not find any restaurants that serves Okinawa Soba in Northern Virginia area. I found this product, instant Okinawa Soba, in the oriental grocery store nearby and I am a royal consumer ever since. I can’t live without this product! I will travel miles to find this product if I can’t find in the store I shop . far The soup & noodles are very good. To make this instant noodle close to the noodle shop quality, I usually garnish with red pickled ginger, chopped green onion, and sliced fish cakes (Kamaboko.)

    these are pretty tasty noodles! as often as i eat instant noodles, i should have fish cakes in the fridge at all times. the red pickled ginger is a great suggestion. i will have to add it the next time i make myself a bowl of okinawa soba. thank you! i am hoping that i will be able to visit japan in july so i can experience fresh, authentic okinawa soba.

    This may say Okinawa Soba but it definitely is not. The soup is totally wrong, they just used instant ramen powdered kombu and bonito broth off the shelf, so to say. Its gotta have pork in the broth. Okinawa soba is not ramen by a long stretch. It does have a natural lye made from wood ash in it but it’s not like the bottled lye sold in Asian grocery stores, it is much gentler. They do have ramen on Okinawa but it’s better than most I’ve had on the mainland. It has a clear pork broth that’s very refreshing, not the heavy tonkotsu everyone seems to be enamored with.
